From The Marina CROSSROADS to Bangkok: Carne Diem Grill goes global
Carne Diem Grill, the specialty restaurant by celebrity chef Dharshan Munidasa with its first permanent outpost in the Maldives at The Marina @CROSSROADS, is set to host an international pop-up later this month at the Siam Kempinski Hotel in Bangkok.
The event marks a milestone for a restaurant conceived and launched in the Maldives, as it presents its first international pop-up and introduces its signature cuisine to a wider global audience, reflecting a strategic step in the brand’s expansion.
The pop-up will take place at ALATi, which will host Chef Dharshan Munidasa for a four-night Carne Diem Grill experience. Widely respected within the Asia’s 50 Best chef community, Chef Dharshan is recognised for his disciplined culinary philosophy, cultural depth and uncompromising approach to flavour.
Carne Diem Grill is known for its unconventional, avant-garde approach to steak, centred on Ignis Maximus, meaning “maximum fire”, a bespoke two-metre charcoal grill designed by Chef Dharshan himself. For the Bangkok pop-up, a custom-built version of the grill has been created exclusively for the four-night event. Operating at temperatures of up to 750 degrees Celsius and inspired by Japanese charcoal yakitori traditions, the technique produces steaks that require no sauce, earning acclaim from guests as among the finest in its category.
In addition to Carne Diem Grill, Chef Dharshan Munidasa is the founder and chef-patron of Ministry of Crab and Nihonbashi Blue at The Marina @CROSSROADS Maldives. Both Ministry of Crab and Nihonbashi Sri Lanka have been recognised on the Asia’s 50 Best Restaurants list, receiving international recognition for their focus on premium sourcing and authentic Japanese culinary techniques. Carne Diem Grill by Dharshan has also formed part of Soneva Fushi Maldives’ collection of world-class dining venues since 2022.
