Alila Kothaifaru Maldives appoints Danilo Paolella as Director of Food & Beverage

Alila Kothaifaru Maldives has announced the appointment of Danilo Paolella as the resort’s new Director of Food & Beverage. With over 20 years of international hospitality experience, Danilo brings a proven track record in luxury dining, operational excellence, and successful pre-openings at globally renowned destinations.

Originally from Italy, Danilo has held leadership positions with prestigious hospitality brands including Four Seasons, Park Hyatt, Falkensteiner Group, and Chef Carlo Cracco’s Michelin-starred restaurant. His career spans luxury properties across the United States, Europe, the Middle East, and South Asia, where he has consistently enhanced guest satisfaction while mentoring teams and delivering exceptional service standards.

A certified hospitality manager with credentials in wine studies, Danilo is widely respected for his comprehensive expertise—ranging from guest experience and team development to innovative culinary strategies and financial performance. Known for his hands-on approach and passion for gastronomy, he is dedicated to curating memorable dining journeys that align with Alila’s ethos of sustainability, local authenticity, and understated elegance.

Expressing his enthusiasm for the role, Danilo remarked that returning to the Maldives and joining Alila Kothaifaru is a dream realized. He emphasised the island’s harmony of natural beauty, culinary creativity, and strong brand values as an ideal foundation for creating inspiring and authentic food and beverage experiences.
