Dave Pynt, Owner and Head Chef at Burnt Ends (Singapore), one of the best restaurants in Asia as per the Diners Club® Asia’s 50 Best Restaurants Academy, is on his way to W Retreat & Spa-Maldives, where he’ll serve as guest chef and Barbecue Ambassador from August 28 to August 30, 2015. While on the luxury playground, the Australian-born chef will train the W talents in preparation and presentation methods of barbecue dishes and will display his passion for playing with fire.
Originally from Perth WA, Pynt comes from a heavyweight culinary background, staging and working under legends such as Tetsuya Wakuda (Tetsuya’s and Waku Ghin), Rene Redzepi (Noma), Victor Arguinzoniz (Asador Etxebarri), Nuno Mendes (Viajante and The Loft Project) and Fergus Henderson (St John and St John Bread and Wine) to name but a few.
During his stay, Pynt will present his standout signature dishes at FISH, the overwater restaurant and at FIRE, the Al Fresco BBQ offering alternatives such as charcoal grill, tandoor and spit roast. Highlights include the pulled pork shoulder in homemade brioche bun with slaw and chipotle mayonnaise and the smoked quail eggs and caviar.
W Retreat & Spa – Maldives, located in North Ari Atoll, is passionate about offering guests creative and modern recipes alongside simpler classics. The resort offers an overwater signature restaurant, all-day dining venue, BBQ restaurant, sunset and pool bar and 15BELOW, the only underground nightclub in the Maldives, literally located 15-steps below island surface offering more than 90 varieties of vodka and glowing cocktails.
