With nearly 30 years of experience in the culinary industry, Chef Nyoman has honed her craft across some of the world’s most prestigious hotel brands, including Rosewood, Marriott, Royal Palace of Jordan, Shangri-La, Montigo Resorts, and Coco Bodu Hithi Maldives. Over the last decade, she has been an integral part of Accor Hotels, making her mark at Sofitel Macau, Pullman Guangzhou, Pullman Maldives, and now, SO/ Maldives.

Originally from Bali, Indonesia, with a deep-rooted love for food cultivated from her childhood, Chef Nyoman attributes her culinary inspiration to her mother, from whom she learned traditional cooking techniques. Her formal training at the Hotel Academy in Indonesia laid the foundation for a distinguished career spanning multiple countries and cultures.

Navigating a traditionally male-dominated industry, Chef Nyoman has overcome challenges with tenacity and determination, proving her capabilities in every kitchen she has led. Her leadership style emphasizes mentorship, training, and fostering talent, ensuring that her team upholds the highest culinary standards.
