With over a decade of experience, Chef Ilse has built an impressive career in some of the world’s most renowned kitchens. Her leadership as Head Pastry Chef at Sushi Samba within Waldorf Astoria Lusail Doha, along with her contributions at L’Atelier Joël Robuchon in Dubai and Pujol in Mexico City—regularly ranked among the world’s top restaurants—has solidified her reputation as a rising talent in haute patisserie.
Chef Ilse’s career is a reflection of diverse cultural influences and refined artistic skill. A graduate of the prestigious Technical & Hotel School of Monaco, she trained under the guidance of Chef Benoit Perruchon-Monge. Fluent in Spanish, English, and French, with intermediate proficiency in Chinese, she brings a global perspective that aligns seamlessly with W Maldives’ bold and adventurous ethos.
