Culinary excellence meets innovation: Maldivian Patissier hosts exclusive five-course Japanese dining experience

Food enthusiasts in the capital are in for an exceptional gastronomic affair as Maldivian Patissier hosts Sushi Night, an exclusive five-course Japanese dining experience running from August 30 through September 2, 2026.

The event brings together two remarkable Maldivian culinary talents: Chef Ahmed Mohamed, Japanese Sous Chef at Cora Cora Maldives, and Chef Aminath Hameed, founder and head pastry chef of Maldivian Patissier.

A Fusion of Fine Japanese Flavors and Artisanal Mastery

The specially crafted five-course menu showcases Chef Ahmed’s expertise in Japanese cuisine alongside Chef Aminath’s creative pastry craft.

Guests begin their journey with Sakizuke, featuring a refreshing Chuka Wakame (seasoned seaweed salad with roasted sesame dressing) followed by Hamachi Jalapeño paired with ponzu sauce. The main course highlights a curated selection of gourmet sushi rolls, including:

  • Ebi Tempura Maki – Crispy tempura prawn topped with Japanese spicy mayo and bonito furikake.

  • Sake Aburi Maki – Flame-seared salmon with avocado, cream cheese, and mentaiko sauce.

  • California Maki – Classic crab meat, cucumber, avocado, Japanese mayo, and tobiko.

  • Spicy Tuna Maki – Fresh tuna, spring onion, spicy mayo, sesame oil, and sesame seeds.

To cleanse the palate before dessert, diners are served Kuchinaoshi, featuring a pear sorbet accented with yuzu pearls. The experience culminates with Mizumono, an innovative dessert composition of miso crème, hazelnut textures, calamansi, and roasted potato ice cream, finished with Kogashi.

The Chefs Behind the Collaboration

Chef Ahmed Mohamed, serving as the Japanese Sous Chef at the luxury resort Cora Cora Maldives, brings years of specialized experience in refining authentic Japanese flavors and sushi techniques. His precision and artistry are central to the evening’s main courses.

Chef Aminath Hameed, one of the Maldives’ most prominent pastry chefs, has built an impressive culinary resume. Having honed her skill set across world-class luxury resorts—including Conrad Maldives Rangali Island, Waldorf Astoria Maldives Ithaafushi, and The Ritz-Carlton—she established her signature brand to bring high-end pastry, artisanal chocolates, and innovative desserts to Malé.

Located on Bodurasgefaanu Magu in Malé (G. Gaveli), Maldivian Patissier is an artisan bakery and café renowned for its French-inspired viennoiseries, signature chocolates, specialty cakes, and curated dining pop-ups. Recognized by its iconic logo—a white tern carrying a croissant in its beak—the establishment has quickly become a hub for culinary creativity and collaborative dining events in the Maldives.
