Starlit Dining with Two Starred Michelin Chef Nick Brill at Patina Maldives

Patina Maldives treated invited guests to experience the gastronomic delights Two-star Michelin chef Nick Brill had devised to launch the new menu at The Fari Beach Club proving a rare treat for any food lover.

With sand underfoot, and stars above, the diners were treated to a sumptuous selection of palette pleasing flavours, textures and tastes presented on ceramic plates and bowls designed, fired and decorated especially for the venue.

Dishes were served “family style”, embracing the relaxed conviviality of the Beach Club, allowing the diners to chat, share and enjoy at the same time, whilst a duo enhanced the occasion, provided suitably styled music, that was pleasing on the ear and complimented the evening.

All the dishes flowed together seamlessly, the crisp bread, designed with a tail to enable easy selection from the basket, and nut brown butter, set the tone, as dishes more akin to a more formal fine dining venue, were laid our along the centre of the tables all presented with an air of elegant simplicity to showcase the types of flavours and fitness of dishes that the new menu will bring to guests who choose to dine at the Fari Beach Club.

Diners were treated to:

  • Ceviche of reef fish, leche di tigre, watermelon and yoghurt (can V)
  • Crudo of rainbow runner, ponzu, sesame and peach
  • Grilled local reef fish on the bone, lemon beurre blanc and sauce vierge with tarragon
  • BBQ roasted lamb, gremolata, zucchini and fregola sarda.
  • lemon tartelette, burnt merengue, red fruit, with a raspberry, rose and basil sorbet

Set at the top of North Male Atoll, The Fari Beach Club and Fari Marine Village form part of Patina Maldives and the Fari Island concept which allows guests from Patina and The Ritz Carlton nearby, to enjoy fine drinking, fine nutrition and fine music. This is all brought together under the guidance of chef Nick Brill, Chef and Owner of The Jane restaurant in Antwerp and reputable DJ, making his tenure a perfect pairing for the vibrant social scene created at the heart of the Marine Village.

The casual seating and tables set the tone for the relaxed, fun and convivial atmosphere. The long bar holds an enviable collection of beverages which the bar staff transform into cocktails and mocktails to suit all palates and preferences.

The pool area provides plenty of space to relax, either in shady cabana’s or under the tropical sunshine. The pool itself allows easy immersion into the tropical paradise with endless expanses of turquoise, blue and white that make up the vast lagoon that Patina surrounds.

The new menu features, light bites, snacks and more substantial dishes to suit the time of day whilst creating the relaxed dining experience befitting of the venue, yet provides an undoubtable gastronomic flair in keeping with chef Nick’s desire to push the boundaries of the culinary field, embracing the new ingredients and flavours that the Maldivian culture offers.
