New SO/ Maldives appoints Todd Adams as Director of Culinary

Ennismore, the London-based hotel and hospitality firm, has brought on Todd Adams as the Director of Culinary for the new SO/ Maldives resort opening this November on a stunning private island overlooking Emboodhoo Lagoon.

Born and raised on the Central Coast of New South Wales, Australia, Todd comes from a long line of family Chefs. With over two decades of international experience, he began his career and worked his way through various establishments across Australia before helming his own consulting business. There, he partnered with Luxury Hospitality brands such as Capella Hotels, Patina Hotels, Habitas, and Six Senses Hotels & Resorts in destinations including Vietnam, Spain, Cambodia, Israel, Saudi Arabia and the Maldives.

“I am thrilled to be a part of the SO/ Maldives opening team and to contribute to the growth and success of this new project. I am passionate about sustainability and the impact we have on our environment and support ethical farming practices and want to bring honesty and creativity to the culinary offerings at SO/ Maldives, providing our guests with an exciting and harmonious dining experience at all of our venues,” says Todd.

Todd brings a modern, contemporary and intuitive approach to cooking as he leads the culinary team and operations of SO/ Maldives, from the Mediterranean-infused Lazuli Beach Club and the all-day Asian-inspired The Citronelle Club to the signature Levantine restaurant Hadaba. He strongly believes that ingredient quality directly impacts the final dish and ultimately elevates the guest dining experience and looks forward to leveraging his skills, knowledge and affinity for simple, ingredient-driven cooking to heighten the overall SO/ experience.
