The Sun Siyam IruFushi prides as one of the largest Food & Beverage operations within the Maldives with fourteen outlets currently at service and two more on its way.

 Standing over the dazzling lagoon, over looking the horizon is the exquisite fine dining restaurant of “The Trio”, one of the most outstanding dining restaurants within the property of The Sun Siyam Iru Fushi. Savoring an intoxicating selection of aromas, Trio serves the best of pure Italian Cuisine. The serenity, ambience and breathtaking panoramic views of sun setting over the horizon makes the eighty covers over water restaurant one of the most favorite dining spots within the Island.

 Upon entering the restaurant, you are welcomed by smiling faces, guiding you towards a table of your choice. Even though the whole restaurant is not fully operated on a green concept, The Trio does it’s best to save the environment in their own ways such as presenting the menu’s on ipads. From their Wine lists, to their Table d’hote Menus, the whole selection of food served in The Trio is presented digitally. The full menu lists are also available in Russian and Chinese Language. The Trio sells over sixty dinner covers on an average, making it their flagship-dining outlet.

 The Trio Kitchen is lead by a Sri Lankan Chef, Chef Roshan who is a Bronze Medal Winner of the Food Hotel Asia Competition held in Singapore. As per Chef Roshan, the best seller on their menu is one of their signature dishes, Mediterranean Sea bass. It is sea bass Italian marinated with thyme, rosemary, garlic, salt, pepper and olive oil. This dish is layered with Saffron Sauce on the bottom, truffles potato cake as the base, and then grilled sea bass carefully placed on the top of potato cake served with rocket salad on the very top. The Trio sells twelve portions of this signature dish on an average day.

Trio is also well known for its T-Bone Florentine Steak, which is traditionally marinated with a bit of fresh thyme, rosemary, oregano and garlic. Upon order, it is carefully placed on a charcoal grill with both sides sealed and served medium rare with accompaniments and sauces. A choice of grilled vegetables, rocket salad, fresh roasted paprika potato or warm citrus cannelloni beans with grilled tomatoes or grilled mushrooms are offered as sidelines with a selection of six different sauces to choose from. The alluring menu of Trio includes outstanding dishes such as the Iberico pork chop, Seafood Ragout, Pumpkin Gnocchi, Squid Ink Ravioli and Risotto. Even though pork ingredients are used on sidelines or with garnishes, upon request, it could be prepared without pork.

 Another favorite signature dish frequently ordered by their diners is the Char Grilled Beef Tenderloin, which is also marinated Italian style with thyme, basil and seasoning. The best-selling dessert at The Trio is non-other than their mouthwatering Chocolate Fondant.

 Since the re-branding of the property to The Sun Siyam Iru Fushi, the property is currently undergoing with major upgrading and refurbishment projects. One of the interesting add-ons to The Trio will be the new Glass Wine Cellar. This is going to be the second wine cellar in the property. Currently the property serves over four hundred and twenty six labels of wine from over twelve nationalities including the best of French, Italian, Austrian, Spanish, German, American, Australian, New Zealand, Argentinian, Chillan and South African wine. The company has granted two staff members a study trip to France for wine training.

 Another twelve members have been provided with WSET Basic Certificationand three members with WSET Intermediate certification with Jeffry Benson from United Kingdom. This in-house training has been very successful since all the participating members graduated with distinctions.

 khThe Sun Siyam Iru Fushi opened the “La Cremeria”, their dessert parlor on the 28th of April 2014. It provides the unmistakable taste of decadent homemade gelatos, sorbets, ice creams and other refreshing frozen beverages. On a hot sunny day, after a stroll in the tropical Island, the cooling, re-energizing and thirst-quenching beverages from La  Cremeria are definitely the best therapy for your body.

 This October, The Sun Siyam Iru Fushi is delighted to add two new culinary experiences to their collection of magnificent restaurants. The newly opened Indian restaurant-Taste of India and a Japanese restaurant- Teppanyaki offers their guests an expanded dining offer.

 Taste of India gives the spicy tastes from the mother land of India. With India’s rich and diverse cultural heritage, this restaurant offers the best selection of Indian cuisine all the way from southern states bordering the Indian Ocean to the mountainous regions of Himalayas. The restaurant offers a lovely 3 course set dinner menu with signature dishes such as the Butter Chicken, which is made of marinated, fried chicken coated with Indian spices and yoghurt. They also serve their house specialty, Dhal Makhani, which is made of high quality lentils mixed with tangy tomato puree and a pinch of chili powder. This restaurant also provides vegetarians and kids special designated menus.

 Led by an experienced Japanese speciality Chef Sakda Suparpang, the dinning outlet of Teppanyaki introduces a 6 course set menu for guests to marvel in the seafood feast fresh from the Indian Ocean. Teppanyaki provides extensive menu options ranging from grilled yellow fin tuna to jumbo scallops, yellow tailed jack fish as well as lobsters while their signature dishes Udon noodles with beef, Maldivian prawns and Yahmasa soy draw lavish appreciation from guests. Sushi and sashimi are also available at this restaurant. This is clearly a heaven for seafood lovers.

 “The Spa” at The Sun Siyam Iru Fushi is a unique spa which provides Spa Cuisine to it’s guests. The Spa Café provides a selection of healthy food and beverages to help them boost their metabolism and to detoxify their body.

 Enjoying the salty aroma from the Indian Ocean, feeling the equatorial breeze, watching over the baby shark gliding below, dining at the “Bamboo” is a truly Thai experience tasting the exotic flavors of the Thailand, spicy, little bit sweet and tangy. The entire kitchen staff members of this authentic Thai restaurant are from Thailand. From noodles, dim sum, soups to the finest sushi and sashimi you could taste the magic on their selection of Asian Cuisine.

 The management proudly provides the service of customized Vegan Menus on request. Upon the arrival of the guests, one chef and senior service staff members will sit with the guests and create a vegan menu according to their requirements. Personalized menus are also provided to guests with special dietary needs. The resort takes special measures and gives priority to offer their guests a memorable stay.

 Future projects on the pipeline to develop their food and beverageservices are the fascinating project of opening the World’s Largest Underwater restaurant. Their team members eagerly awaits with excitement as this underwater restaurant would definitely mark The Sun Siyam Iru Fushi on the World Records. It is going to be designed by the world renowned Aquarium Architect Mike Murphy from New Zealand. He is responsible for Three Major “World-Firsts” in the underwater acrylic tunnel field. This restaurant is going to be a Thirty Four covers restaurant in the pristine lagoon of The Sun Siyam Iru Fushi.
