Hotel Asia Culinary Challenge marks 20th edition with expanded competition programme

The Hotel Asia International Culinary Challenge returns in 2026 for its landmark 20th edition, reaffirming its role as a leading platform for culinary excellence, professional recognition and skills development in the Maldives.

More than a competition, it has become a place where chefs, students, hospitality professionals and young Maldivian talent can learn, compete, connect and build pathways towards national and international careers.

Organised by Maldives Exhibition & Conference Services Pvt Ltd (MECS), the 2026 Hotel Asia International Culinary Challenge will take place from 27 to 30 September 2026 at The Maldives National University (MNU), Malé, and the Synthetic Track, Hulhumalé. It runs alongside the Hotel Asia Exhibition, held from 28 to 30 September 2026 at the Synthetic Track in Hulhumalé.

This year’s Challenge is expected to receive around 600 competition entries across its wide range of culinary, pastry, artistic and beverage classes. The event will be evaluated by a high-powered 43- member judging panel, comprising culinary, pastry, hospitality and food-safety professionals from the Maldives and abroad. The panel includes 11 Maldivian judges, ensuring that global culinary standards are assessed alongside strong local expertise and an understanding of the Maldivian hospitality industry.

For two and a half decades, the Challenge has brought together chefs from resorts, hotels, restaurants, catering establishments, educational institutions and the wider food-service sector. It has developed into one of the country’s most significant professional culinary platforms, providing chefs with the opportunity to benchmark their abilities, receive expert feedback and gain recognition in front of leading hospitality professionals.

The Culinary Challenge was introduced under the leadership of Project Director, Chef Alan Palmer, who has been associated with every edition since 2002. A Worldchefs Certified International Judge, Chef Palmer has played a central role in the growth and development of the event and the advancement of culinary professionals in the Maldives. “The event has excellent facilities, committed participants and a high-powered team of judges. It represents the pinnacle of culinary events in the Maldives. I am very happy to have been involved since day one and to witness the emergence of Maldivian cooking, the development of Maldivian chefs and the progress they have made over the years,” said Chef Alan Palmer, Project Director since 2002 and Worldchefs Certified International Judge.

His continuing involvement has helped develop the competition into a respected platform where chefs based in the Maldives can test their skills against formal professional standards and receive expert evaluation from experienced local and international judges.

The Hotel Asia International Culinary Challenge is designed to test the full range of skills required in a modern professional kitchen. Across live cooking, pastry, artistic display and beverage categories, competitors must work within strict time limits, follow detailed category requirements and produce dishes that meet high standards of taste, technique, hygiene and presentation.

The 2026 programme introduces several new categories, expanding opportunities for chefs to demonstrate innovation, contemporary culinary knowledge and practical restaurant skills. Competition classes include:

  • Hot cooking: Fish fillet, beef, seafood, poultry, lamb, desserts, signature prawns, halal truffles and Singapore-style dishes
  • Traditional and contemporary cuisine: Maldivian Dish, Asian Fusion Cuisine Challenge, Perfect Omelette and Egg Benedict Style, and the Burger–Low Waste Challenge
  • Pastry and artistic work: Decorated Cake, Fruit and Vegetable Carving, Artistic Showpiece, Bread and Pastry Display, Pastry Chef Challenge and Three Desserts Display
  • Team and young-chef development: Team Challenge and the dedicated Young Chef category for competitors aged 25 years and below
  • Beverage challenges: Iced Mocktail, Tea Challenge and Cocktail Challenge
  • The fish categories remain a key part of the Challenge.

Competitors will work with the same fish product while producing approximately 50 different dishes, demonstrating how a single ingredient can be transformed through individual creativity, flavour combinations, cooking techniques and presentation styles. This challenge highlights versatility, technical ability and the capacity of chefs to produce distinctive dishes from a common core ingredient. These challenges encourage chefs to demonstrate not only creativity and flavour, but also planning, speed, precision, cleanliness and adaptability. Competitors are expected to manage their own mise-en-place, bring and prepare permitted ingredients in accordance with competition rules, work safely and leave their stations clean and organised.

Food hygiene, waste control and professional kitchen conduct are treated as essential elements of performance rather than secondary requirements. The live cooking challenges are especially demanding, requiring chefs to prepare and plate multiple portions within limited timeframes, often using designated sponsor ingredients. Dishes are assessed for preparation, innovation, service, presentation, taste and texture, with taste and texture carrying the greatest weighting in the judging criteria. This ensures that entries are assessed not only for visual impact, but also for their quality, balance, execution and suitability for professional food service.

The Burger–Low Waste Challenge reflects the growing importance of sustainability in hospitality. Participants must demonstrate efficient ingredient use, apply low-waste methods and creatively use trimmings, offcuts or secondary ingredients. Techniques may include pickling, fermenting, dehydration and repurposing ingredients into sauces, garnishes or seasonings.

Over the years, the Hotel Asia International Culinary Challenge has helped create meaningful professional pathways for young Maldivian chefs. Participants gain experience competing under pressure, receiving feedback from internationally experienced judges, working to formal culinary standards and presenting their skills to leading resort, hotel and hospitality professionals.

For many young chefs, the Challenge has been an early step in a longer professional journey. Chefs who first participated as emerging competitors have progressed through the hospitality industry into senior leadership positions, including executive chef roles. Their development reflects the value of the event as both a competition and a learning platform, providing exposure, confidence, professional recognition and access to opportunities that may not otherwise be available early in a chef’s career.

The event supports this progression through its Young Chef category, the Most Promising Young Maldivian Chef — BBM Rising Talent Award, masterclasses with internationally recognized chefs and direct interaction with senior culinary professionals from resorts, hotels, educational institutions and the global judging panel.

The Maldivian Dish category holds particular cultural importance. Competitors must create a traditional Maldivian dish using only products produced in the Maldives, while presenting it in a modern style. The category allows chefs to reinterpret local culinary heritage, highlight Maldivian ingredients and promote the country’s distinctive flavours to an international panel of judges and hospitality audiences.

Through its wide range of challenges, the Hotel Asia International Culinary Challenge offers chefs a rigorous professional environment in which to learn, improve and gain recognition.

As it marks its 20th edition, the Challenge continues to support higher culinary standards, nurture future industry leaders and advance the long-term ambition of achieving wider global recognition for Maldivian cuisine.
